The weather is still freezing over here but the sun is shining a bit more often and longer ever day we get closer to summer. I mean spring, lets not get ahead of ourselves here hah! I love spring for many different reasons and one of them is how much it makes me crave fresh & healthy food. So today I wanted to share the results of a little experiment I tried to do with grapefruits!
For the Salad
> 3 big hands full of spinach (baby spinach is even nicer!)
> 1 grapefruit pealed and sliced
> 1 cup of walnuts chopped up a bit
> Piece of Feta all crumbled up (I love feta too much to tell you how much to put in there so just go with your own taste.
> Hand full of mint leaves
> 1/2 cucumber in half moon slices
For The Dressing
> Juice of 1/2 a lemon
> 1 tsp of honey (or a tiny bit more)
> Pinch of salt & pepper
To make it:
Don’t chop up your ingredients too finely, for some reason I like the ingredients to be chunky in this salad in particular because it gives you so many surprises in a bit. Toss all the ingredients for the salad together and only make the dressing when you’re about to serve the food. Whisk the honey and lemon together and drizzle it over your salad. Taste your salad before you add the salt and pepper because you might even like it without. However, if you feel like grapefruit is a bit bitter, a pinch of salt can actually do wonders in bringing out the sweetness of the grapefruit! Now all there’s left to do, is dig in and enjoy.
I was recently invited to an event hosted by Florida Grapefruit and it was super informative and fun. We got to play around with the fruit making mocktails while we learned about the benefits of this super food. Grapefruits are stocked with vit. C which isn’t just great for beating your colds but as it turns out you need vitamin C to take up iron from your food. I left the event feeling super inspired to make more with grapefruits and the next two weeks I ate it every single day. I felt great but also not so great. I started getting red spots everywhere and as it turns out I am allergic to grapefruit. Yikes! I thought about not sharing this post because it felt odd to post something I won’t be eating ever again, but on the other hand, it is a really lovely salad and I really think you should try it. I might even try to switch the grapefruit for oranges, should be lovely too right? Anyway, long story but I just wanted to be 100% honest ;).
